Speakers for HT room, need help with specifics that fit the room

I've been doing a lot of speaker research for my home theater. Not as substantial as many true HT's listed here, but fun for me nonetheless. See attached floor plan. While not ideal, we are putting this in the loft on the second floor. The TV is the blue square. The couch is the redish.
Wife is ok with floor stands. Prefers them over on-wall. However, she doesn't want them too far away from the wall. She does NOT want an oak grain. The only wood grain she would be ok with is browns. Definitely not red. Overall she prefers piano black.
With bookshelf speakers we worry kids would knock them over. They are old enough to know better, but they are still kids. But if it's stable, I would consider this.
I'm looking to spec the complete system. I'm thinking a 5.1.4 system.
Can I use in-wall/in-ceiling for surrounds and Atmos speakers?
Receiver is a Yamaha A2050 I already own.
Floor is engineered hard wood.
I prefer a neutral speaker. If I had to lean one way or the other, it would be towards a warmer sound.
90% movies, 10% music.
Budget is $5k, but would prefer to stick closer to $3k.
I've been looking at all the usual suspects, SVS, KEF, Ascend, etc... Where should I go with this?
